One of the greatest parts of traveling and catering in different countries is learning their typical traditional fare, then putting your own spin on it. Raw food chef Kirsten Gum is always up to the challenge of transforming local favorites into healthy, raw versions.

Here, Kirsten makes a raw, vegan version of huancaina, a spicy, creamy sauce popular in Peru. Instead of the usual milk and cheese, Kirsten used cashews and oil.
